Sweet Potato Chips with Green Broccoli Dip

Ingredients

  • 1 broccoli (500 g)
  • 200 g soy yogurt
  • 2 tbsp almond drink (almond milk)
  • Salt
  • pepper (ground)
  • 2 large sweet potatoes (≈600 g)
  • vegetable fat (for frying)
  • 1 tsp mild paprika powder

    Wash the broccoli, cut into florets and peel and dice the stem. Place everything in a steamer basket and set over a pot with 2-3 cm of water. Cover and steam for about 10 minutes. Then blend the steamed broccoli with soy yogurt and almond milk to a creamy dip, season with salt and pepper, and chill until serving.

    Peel the sweet potatoes and slice thinly on a mandoline. Heat vegetable fat to 170°C and fry the potato slices in batches until crisp. Drain on paper towels and season with salt and paprika. Serve with the broccoli dip.
