Sweet Potato Cakes

Ingredients

  • 200 g peeled sweet potatoes
  • 50 g walnuts (finely chopped)
  • 125 g flour
  • 175 g sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg and ginger powder
  • Salt
  • ground pepper
  • 0.5 tsp Baking soda
  • 60 ml oil
  • 40 ml milk
  • 1 egg
  • oil for greasing
  • 8 tsp apricot jam
  • 24 peeled almond kernels
  • 1 Mango
  • 1 muffin tin (with 12 cavities)

Instructions

    Grate sweet potatoes finely. In a bowl combine flour, 75 g sugar, spices and baking soda. Mix oil, milk, grated sweet potatoes and egg well, then add walnuts to the dry mixture and stir thoroughly.

    Brush 8 cavities of the muffin tin with oil and fill two‑thirds with batter. Bake in preheated oven at 180°C (middle rack) for 50–60 minutes, remove and cool.

    Release cakes from molds. Cut each cake crosswise, spread 1 tsp jam on the lower half, then reassemble.

    Melt remaining sugar in a pan, caramelize almonds in it. Add about 3 tbsp hot water and simmer over low heat for 2–3 minutes. For serving, peel mango, cut into wedges, arrange on four dessert plates. Place two cakes on each plate and top with three almonds drizzled with some caramel.
