Ingredients

  • 1 cube fresh yeast (42 g)
  • 600 g flour
  • 1 tsp salt
  • flour (for work surface)
  • 0.5 pineapple (250-300 g)
  • 300 g cooked ham (sliced)
  • 350 g Low-fat Quark
  • 150 g crème fraîche
  • 2 egg yolks
  • pepper (ground)
  • 200 g freshly grated cheese (e.g., Gouda)

Instructions

    Dissolve the yeast in 320 ml lukewarm water for the dough. Mix flour with salt, place in a bowl, press a well in the center and pour in the yeast mixture. Knead by hand into a smooth dough, knead vigorously on a floured surface for about 10 minutes, return to the bowl, cover and let rise in a warm spot for about 1 hour.

    Preheat the oven to 220 °C with upper and lower heat. Peel, quarter, remove the hard core of the pineapple and cut into bite-sized pieces. Quarter the ham slices. Mix quark with crème fraîche and egg yolks, season with salt and pepper. Knead the dough again on a floured surface, divide into four equal portions, shape each into a long flatbread.

    Place these on a baking sheet lined with parchment paper, spread the quark mixture over them, top with pineapple pieces and ham slices. Sprinkle with pepper and grated cheese, bake in the preheated oven for about 20 minutes until golden brown. Remove and serve immediately.
