Rice pudding with exotic fruits

- 200 g rice
- 100 g sugar
- 20 ml rum
- 100 g raisins
- a pinch of freshly grated nutmeg
- 750 ml milk
- 2 tbsp butter
- 2 Bananas
- 1 ripe Mango
- 1 ripe papaya
- 3 tbsp Lemon juice

Place rice, sugar, rum, raisins and nutmeg in a baking dish, stir well and let sit for about 20 minutes. Peel the bananas and cut into ~1 cm thick slices. Bring milk, butter and bananas to a boil and pour over the rice; mix thoroughly and cover the dish with foil. Bake in a preheated oven at 150 °C for 1 hour 30 minutes, stirring twice during baking. Remove, stir again and check if the rice is cooked; if not, bake another 20 minutes. Let the rice cool, then refrigerate until chilled. Peel mango and papaya before serving: cut mango flesh into strips from the stone, halve the papaya, remove seeds and slice flesh into strips.
