Sweet Potato & Avocado Skewers

Ingredients

  • 500 g large sweet potatoes (1 large sweet potato)
  • Salt
  • 350 g small avocados (2 small avocados)
  • 3 tbsp Sesame oil
  • Pepper
  • 2 Garlic cloves
  • 20 g ginger (1 piece)
  • 4 stems cilantro
  • 1 red chili pepper
  • 0.5 tsp Peppercorns
  • 0.5 tsp Coriander seeds
  • 2 tbsp Lime juice
  • 1 tsp agave syrup
  • 2 tbsp rice vinegar
  • 2 tbsp Soy sauce
  • 8 wooden skewers

Instructions

    Peel the sweet potatoes, cut into bite-sized pieces and boil in salted water for about 5 minutes. Drain well.

    Meanwhile peel the avocados, halve, pit, scoop out the flesh with a spoon and cut into bite-sized pieces. Alternate sweet potato and avocado pieces on the wooden skewers, brush with 1 tbsp oil and season with salt and pepper. Grill the skewers on a preheated grill for about 5 minutes, turning occasionally.

    For the dressing, peel and finely mince garlic and ginger. Wash cilantro, pat dry and finely chop. Halve the chili lengthwise, remove seeds, wash and chop. Crush peppercorns and coriander seeds in a mortar. Combine all with garlic, ginger, cilantro, chili, remaining oil, lime juice, agave syrup, rice vinegar and soy sauce; taste and adjust seasoning.

    Place the skewers on a plate and drizzle with the dressing.
