Ingredients

  • 1 roll (from yesterday)
  • 600 g mixed ground meat
  • 1 egg
  • 2 tbsp freshly chopped parsley
  • 1 tsp lemon zest
  • Salt
  • Pepper (freshly ground)
  • oil for frying

Instructions

    Soak the roll in a little water. In a bowl combine the ground meat, egg, parsley, drained roll, and lemon zest; season with salt and pepper and knead well. Shape into balls around skewers. Fry in hot oil in a non‑stick pan, turning, for 5–6 minutes until golden brown.

    Drain on kitchen paper and serve cold or warm with yogurt dip as desired.
