Sweet Pork Humps

- 250 g butter (cold)
- 250 g flour
- 200 g sugar
- 3 tsp baking powder
- 250 g quark
- sugar (for working)

1. Cut the butter into small pieces.

2. Sift the flour with the baking powder onto a work surface, mix in the sugar and press a well in the middle. Add the butter pieces.

3. Add the quark and knead with your hands from inside out into a smooth dough.

4. Roll the dough slightly on a lightly floured working surface.

5. Roll it into a rectangle of about 30 x 60 cm, fold twice in double turns.

6. Wrap in cling film and refrigerate overnight.

7. Grease a baking tray. Preheat the oven to 220°C.

8. Place sugar on a work surface and roll the dough onto a size of 22 x 50 cm. Turn the dough plate several times so that the sugar is evenly rolled into the dough.

9. Fold the dough plate from the greasy sides twice towards the middle and fold it together a third time. Cut 50 pieces of 1 cm width from this 50 cm long strip and place them on the baking tray. Shape slightly and let rest on the tray for 15 minutes, then bake in the preheated oven for about 10 minutes. Flip with a spatula so that the sugar can caramelize on both sides.
