Ingredients
- 400 g pumpkin flesh (e.g., muscat pumpkin)
- 100 ml Orange Juice
- 0.5 lemon (juice)
- 75 g sugar
- 1 egg yolk
- 200 g mascarpone
- 60 g pistachio kernels
- 4 ladyfingers
- 4 tbsp orange liqueur
- chopped pistachios (for garnish)

Dice the pumpkin flesh and place it in a small pot with orange juice, lemon juice, and 4 tbsp sugar. Cover, bring to a boil, then simmer gently for about 20 minutes until soft. Afterward puree finely and let cool.

Whisk the egg yolk with the remaining sugar until pale and creamy. Fold in the mascarpone.

Distribute pistachio kernels into four glasses and fill with the pumpkin purée. Crumble ladyfingers on top and sprinkle over. Drizzle with orange liqueur and spread the cream on top.

Serve sprinkled with chopped pistachios.
