Ingredients
- 250 g flour
- 2 tsp Baking powder
- 0.5 tsp Curry Powder
- 120 g freshly grated Gruyère cheese
- 250 g pumpkin flesh (peeled, e.g., muskmelon pumpkin)
- 2 Eggs
- 70 ml Olive oil
- 80 ml Vegetable broth
- 200 g Sour Cream
- 75 g freshly grated parmesan
- oil for the baking tray
Instructions

Preheat the oven to 160°C fan. Oil the muffin tin cavities and set aside.

Combine flour with baking powder, curry, and Gruyère. Grate pumpkin and fold into the dry mix. Whisk eggs with oil, broth, and sour cream; quickly stir into the pumpkin mixture.

Fill the muffin tin, sprinkle Parmesan on top, and bake for about 25 minutes until golden brown. Remove and let cool slightly in the tin.

Finally lift out of the tin and serve warm or cold.
