Sweet Plum Pizza

Ingredients

  • 0.5 packet dry yeast (4 g)
  • 60 g sugar
  • 250 g flour
  • 2 tbsp sunflower oil
  • 400 g plums
  • 1 drop bitter almond aroma
  • 4 tbsp Honey
  • flour (for working)
  • 2 tbsp apricot jam
  • 50 g almond flakes
  • powdered sugar (for dusting)

Instructions

    Stir the yeast with the sugar into about 100 ml lukewarm water. Put the flour in a bowl, make a well in the middle and pour in the yeast mixture. Cover and let rest for about 15 minutes. Then knead with the oil into a smooth dough and let rest another 45 minutes.

    Meanwhile wash the plums, pit them and cut into thin slivers. Mix with 2 tbsp honey and the almond aroma.

    Roll the dough on a floured surface to a circle (about 26 cm diameter), place on a baking sheet lined with parchment paper, cover with a kitchen towel and let rest another 15 minutes.

    Preheat the oven to 200°C fan or conventional heat.

    Spread the dough with apricot jam and arrange the plums in a tiled pattern. Bake for about 30 minutes. Remove briefly, drizzle with remaining honey and sprinkle almond flakes on top. Bake another 10 minutes.

    Let cool and serve dusted with powdered sugar.
