Plum Cake

Ingredients
- 1 untreated lemon
- 1 vanilla pod
- 200 g dried plums
- 0.5 l black tea (freshly brewed)
- 1 cinnamon stick
- 300 ml milk
- 100 g sugar
- 1 Tbsp vanilla sugar
- 4 eggs
- Salt
- 80 g flour
- 20 ml rum

Wash the lemon hot, dry rub and cut off the zest. Split the vanilla pod lengthwise and scrape out the seeds. Steep the plums in the hot tea and let them soak with the lemon zest and cinnamon stick for 2 hours.

Warm the milk with sugar and vanilla sugar. Beat the eggs with salt in a bowl. Add flour and milk, whisk until smooth. Add rum and vanilla seeds, rest for about 10 minutes.

Preheat oven to 200°C fan. Grease and dust the pan. Drain plums from tea onto kitchen paper. Spread them in the pan and pour batter over. Bake 10 minutes. Reduce temperature to 160°C fan and bake another 35 minutes until golden yellow, then cool with door open. Serve warm.
