Ingredients

  • 200 g milk rice
  • 800 ml milk
  • 125 g sugar
  • 1 pinch salt
  • 600 g plums
  • 100 g chocolate
  • 4 eggs (M)
  • 50 g macadamia nuts
  • 50 g butter

    Rinse the milk rice in a sieve with cold water, let it drain briefly and then add it to a pot with the milk, half of the sugar and the salt. Bring everything to a boil, then cover and simmer on very low heat for 15-20 minutes until the liquid is absorbed. Transfer the rice to a bowl and allow it to cool slightly.

    Preheat the oven to 180 °C (convection). Wash, halve and pit the plums. Roughly chop the chocolate. Separate the eggs. Whisk together the yolks, the plums and the chopped chocolate. Beat the egg whites until stiff peaks form, gradually incorporating the remaining sugar (about 60 g). Fold the meringue into the milk rice mixture. Pour the rice into a baking dish about 20×20 cm. Roughly chop the macadamia nuts and scatter them with butter chunks over the top of the rice. Bake in the hot oven on the middle rack for 30-40 minutes until golden brown.
