Sweet Dumplings with Speculoos

- 500 ml milk
- 50 g sugar
- 1 pinch salt
- 100 g semolina
- 50 g butter
- 1 egg yolk
- 1 egg
- 1 tsp gingerbread spice
- 5 speculoos biscuits
- powdered sugar (for dusting)
- mint (for garnish)
Instructions

Bring the milk with the sugar and salt to a boil. Sprinkle the semolina into the boiling mixture, stir over low heat, then set aside and let it soak for 15 minutes.

Then stir in the butter, egg yolk, egg, and gingerbread spice. Cover and refrigerate for 1 hour.

Next bring plenty of salted water to a boil. Finely chop the speculoos biscuits.

With wet hands form small dumplings, drop them into the boiling salted water and let them cook with an uncovered lid for 5-10 minutes. Remove with a slotted spoon and roll in the speculoos crumbs. Dust with powdered sugar, garnish with mint, and serve with walnut or cinnamon ice cream if desired.
