Quark Dumplings

Ingredients
- 400 g quark
- 2 Eggs
- 75 g flour
- 50 g semolina
- 50 g breadcrumbs
- 2 tbsp Sour cream
- 2 tbsp sugar
- 1 tsp lemon zest
- Salt
- 100 g butter
- 7 tbsp breadcrumbs
- a pinch of salt
- zinc-sugar-cinnamon mixture (for rolling)

Drain the quark well and, if necessary, squeeze out excess moisture. Mix with eggs, flour, semolina, bread crumbs, sour cream, sugar, and lemon zest into a dough. If the dough is too wet, add a little more flour. Chill the mixture for about 1 hour. Using a tablespoon, scoop portions of the quark mixture from the dough and shape approximately 8 dumplings.

Place in lightly salted simmering water and let cook for about 10 minutes until done. Remove with a slotted spoon and drain well. Heat butter in a pan and fry breadcrumbs until golden yellow. Mix in some cinnamon-sugar and roll the dumplings in it. Serve immediately in a serving bowl.
