Sweet Dumplings with Plum Filling

Ingredients
- 400 g starchy potatoes
- 100 g flour
- 2 tbsp semolina
- 150 g soft butter
- 6 tbsp sugar
- 1 egg yolk
- 1 pinch salt
- 12 plums
- 12 cubes of sugar
- flour (for the work surface)
- 100 g breadcrumbs
- 0.5 tsp ground cinnamon

Wash the potatoes and boil for about 30 minutes. Drain, peel, and press hot through a potato masher onto a board. Let the mash dry. Add flour, semolina, 1 tbsp butter, 2 tbsp sugar, egg yolk, and salt to the mashed potatoes. Quickly knead into a smooth, pliable dough. Rest for about 20 minutes.

Meanwhile wash the plums, cut them open, pit them, and insert a cube of sugar in place of the pit.

Shape the potato dough on the floured surface into a roll about 5 cm thick, slice into 12 equal pieces, flatten slightly, top each with a plum, and form into dumplings. Drop all dumplings into boiling water and simmer for about 20 minutes.

Melt the remaining butter in a large pan and brown the breadcrumbs. Remove from heat and stir in the remaining sugar and cinnamon.

Lift the cooked dumplings with a slotted spoon, drain, plate, and pour the breadcrumb butter over them.
