Ingredients

  • 700 g potatoes (starchy, boiling type)
  • Salt
  • 1 packet vanilla sugar
  • 60 g flour
  • 60 g semolina
  • 4 tbsp soft butter
  • 1 egg yolk
  • 16 plums
  • 4 tsp sugar
  • 4 tbsp butter
  • 80 g breadcrumbs
  • 25 g coconut flakes
  • cinnamon powder
  • 2 tbsp sugar

Instructions

    Wash the potatoes and cook them in salted water, drain, peel, and press into a bowl. Let the potatoes cool slightly.

    Add a pinch of salt, vanilla sugar, flour, and semolina to the potatoes and mix. Knead soft butter and egg yolk with your hands; if the dough is too soft, add a little more flour and knead again.

    Divide the dough into 8 pieces and shape each into a ball. Wash and pit the plums, then mix them with sugar. Flatten each dough ball slightly, place two plums in the center, and wrap the dough around them to form dumplings.

    Bring a large pot of lightly salted water to a boil, add the dumplings, and simmer for 10-15 minutes until cooked through. Remove with a slotted spoon.

    Heat butter in a pan and toast breadcrumbs together with coconut flakes until golden brown; stir in cinnamon and sugar. Plate the finished plum dumplings with the buttery breadcrumb topping and serve.
