Ingredients

  • 500 g blackberries
  • 500 g mirabelles
  • 2 tbsp lavender buds
  • 1 kg gelatin sugar (1:1)
  • 500 g starchy potatoes
  • a pinch salt
  • 200 g quark
  • 50 g sugar
  • 1 packet vanilla sugar
  • 2 egg yolks
  • 50 g semolina
  • 50 g flour
  • 60 g Butter
  • 100 g breadcrumbs
  • 2 tbsp powdered sugar

Instructions

    Wash, clean, and pit the mirabelles. Cut the berries into small pieces and roughly mash part of them with a hand blender. Mix the fruits and lavender buds in a large pot with the gelatin sugar. Bring to a boil while stirring and simmer for 4 minutes.

    Fill hot-washed jars with the jam and seal immediately. Place jars on their lids for 10 minutes, then flip over and let cool. Wash the potatoes, cook them in salted water with skins on for about 25 minutes, drain, let steam off slightly, peel, and press through a potato ricer.

    Whisk together quark, salt, sugar, vanilla sugar, egg yolks, and semolina; let sit for 10 minutes to thicken. Then mix in the cooled potatoes and flour to form a smooth dough. Divide the dough into 12 portions, shape into balls, flatten slightly, and place a teaspoon of jam in each center before shaping into dumplings.

    Bring plenty of salted water to a boil in a pot, add the dumplings, and simmer for 10-12 minutes. When they float to the surface, lift them with a slotted spoon and drain. Melt butter in a pan, toast breadcrumbs with powdered sugar until golden brown. Arrange the dumplings on plates, sprinkle with breadcrumb mixture, and serve with jam.
