Blueberry and Strawberry Pancakes

- 40 g Butter
- 1 vanilla pod
- 3 eggs
- 30 g powdered sugar
- 200 g Buttermilk
- 0.5 tsp Baking soda
- 150 g flour
- 2 tsp Baking powder
- 100 g blueberries
- 100 g Strawberries
- 3 tbsp maple syrup

In a pan melt half the butter and let it cool. Split the vanilla pod lengthwise, scrape out the seeds. Separate the eggs; beat the whites into stiff peaks. Whisk the yolks with powdered sugar and vanilla seeds. Add buttermilk, baking soda, melted butter, flour, and baking powder to form a smooth batter. Fold in the beaten egg whites.

Heat some remaining butter in a pan, spoon the batter onto it, spread slightly, and cook over low heat, turning once until golden brown. Keep finished pancakes warm in an oven at 100°C. Continue cooking until all batter is used.

Clean and optionally halve the blueberries and strawberries. Arrange the pancakes on plates, top with a pat of butter, drizzle maple syrup, and serve immediately.
