Ingredients

  • 2 sheets white gelatin
  • 500 ml whipping cream
  • 1 vanilla pod
  • Zest of 1 organic orange
  • 300 g raspberries (frozen or fresh)
  • 1 packet vanilla sugar
  • Orange slice (and mint)

Instructions

    Soak gelatin in cold water. Pour cream into a saucepan. Split the vanilla pod and scrape out the seeds. Add the vanilla pod, seeds, and orange zest to the cream. Simmer for about 10 minutes. Squeeze out excess water from the gelatin and dissolve it in the non-boiling cream. Strain the cream through a sieve and pour into four glasses. Refrigerate for 3-4 hours.

    Puree raspberries and strain through a sieve. Mix with vanilla sugar. Spoon raspberry coulis over the panna cotta and garnish with an orange slice and mint leaves before serving.
