Milk Rice with Berries

The milk rice with berries from Spoonsparrow is a real soul warmer and brings many antioxidants.

Ingredients

  • 1 Vanilla bean
  • 0.5 Organic lemon
  • 200 g rice pudding grains
  • 1 l milk (3.5 % fat)
  • 15 g coconut palm sugar (1 tbsp)
  • 1 pinch salt
  • 150 g raspberries
  • 150 g blackberries
  • 150 g blueberries
  • 150 g Strawberries
  • 300 g yogurt (3.5 % fat)

Instructions

    Slice the vanilla bean lengthwise. Wash the lemon hot, pat dry and peel a strip of zest with a vegetable peeler (use the rest of the lemon elsewhere).

    Add rice, milk, coconut palm sugar, salt, vanilla bean and lemon zest to a pot and bring to a boil while stirring occasionally. Then turn off the heat and let the rice simmer covered for about 30 minutes, stirring from time to time.

    Meanwhile wash berries gently, pat dry and trim if necessary. Blend half of the berries with yogurt until creamy.

    Remove the vanilla bean and lemon zest from the milk rice and divide into four bowls. Garnish with sauce and remaining berries.
