Ingredients

  • 1 kg sweet cherries
  • 1 kg gelatin sugar (1:1)
  • 0.5 vanilla pod (pulp)
  • 60 ml cassis
  • 1 untreated lemon (juice)

Instructions

    Wash the cherries, pit them and mix with the sugar, vanilla pulp, liqueur and lemon juice in a pot; lightly mash the fruit with a potato masher and let everything steep for about 1 hour.

    Bring everything to a boil and simmer for 4 minutes. Transfer into well-sauced jars, seal tightly, place on their heads for 10 minutes, then turn upright and allow to cool completely. Store in a cool, dark place.
