Ingredients

  • 500 ml milk
  • 500 g yogurt
  • 200 g beet syrup
  • 1 tsp salt
  • 2 tsp Baking powder
  • 400 g wheat flour
  • 150 g graham flour
  • 100 g rye flour (coarse)
  • 50 g sunflower seeds
  • 2 tbsp flaxseeds
  • 60 g dried apricots
  • 60 g hazelnut kernels
  • vegetable oil (for the pan)

Instructions

    Preheat the oven to 200°C with fan and top heat.

    Whisk together milk, yogurt, syrup, salt, and baking powder in a bowl. Add all flours, sunflower seeds, flaxseeds, chopped apricots, and roughly chopped hazelnuts; mix into a dough. Pour into an oiled loaf pan, smooth the surface, and bake for about 1 hour. Reduce temperature to 170°C and bake for another ~30 minutes. If the bread darkens too much, cover with parchment paper.
