Herb Bread Sticks

Ingredients
- 0.5 cube fresh yeast (about 21 g)
- 600 g flour
- 1 tsp salt
- 40 ml olive oil
- 1 tsp freshly chopped thyme
- 1 tsp freshly chopped rosemary
- flour (for the work surface)

Dissolve the yeast in 300 ml lukewarm water. Mix the flour with the salt, place it in a bowl, press a well in the center, pour in the yeast mixture and oil, then add the herbs. Knead into a smooth dough by hand or with an electric hand mixer, then knead vigorously on a floured surface for about 10 minutes. If the dough feels too wet, fold in more flour; if it’s too dry, add a little more lukewarm water. Return the dough to the bowl, dust with flour, cover and let rise in a warm place for about an hour.

Heat the grill.

Knead the dough again, divide into eight equal portions, shape each into a 30 cm long strand, and wrap spirally around sticks. Place on the hot grill and bake for 10–15 minutes, turning occasionally. Serve with meat, fish or vegetables.
