Sweet Beetroot Cake

Ingredients
- butter (for the baking pan)
- flour (for the baking pan)
- 2 beetroot (about 400 g)
- 80 g dark chocolate
- 150 g flour
- 1 tsp Baking powder
- 50 g ground almonds
- 1 tsp gingerbread spice
- 120 ml plant oil
- 1 tbsp cocoa powder
- 3 eggs
- 0.5 tsp Salt
- 200 g brown sugar
- 50 g chopped walnuts
- 1 untreated orange
- 175 g powdered sugar
- 1 tbsp poppy seeds
Instructions

Preheat the oven to 180°C fan. Grease the baking pan with soft butter. Sprinkle a little flour evenly over the whole pan and tap off any excess flour.

Peel the beetroot, trim the ends, wash, dry and grate finely (best done with a food processor as it splashes). Roughly chop the chocolate.

Combine the flour with baking powder, almonds, gingerbread spice, oil, cocoa, eggs and salt. Fold in the grated beetroot, chocolate, sugar and walnuts. Pour into the prepared pan.

Bake in the preheated oven for 45-50 minutes (check with a skewer).

Remove from the oven, let cool about 15 minutes, then unmold onto a cooling rack to finish cooling.

Wash the orange hot, dry it and grate its zest finely on a grater. Then squeeze the orange to extract juice.

For the glaze whisk powdered sugar, 3-4 tbsp orange juice and the zest until smooth. Spread over the cake and sprinkle with poppy seeds before serving.
