Ingredients
- 1 kg rose hips
- 400 ml white wine vinegar
- 500 g sugar
- 6 cloves of peppercorns
- 1 walnut‑size piece ginger
- 0.5 stick cinnamon

Clean and pit the rose hips. Bring the vinegar with the sugar, peppercorns, peeled and chopped ginger, and cinnamon to a boil and simmer for about 2 minutes. Add the rose hips and cook while stirring for about 30 minutes.

Remove the fruits from the liquid and fill the jars. Re‑boil the liquid and pour it hot over the fruits so they are well covered. Seal the jars tightly immediately and let them cool upside down.
