Ingredients

  • 1 kg ripe peaches
  • 1 Vanilla bean
  • 4 tbsp Lemon juice
  • 500 g canning sugar

    Score the peaches crosswise on the bottom side. Using a slotted spoon, immerse them in boiling water for 30 seconds to 1 minute until the skin loosens slightly. Remove, shock in cold water, peel off the skin, halve and pit the peaches. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and pod to the peaches. Add lemon juice and sugar, mix well, cover and let stand for at least 4 hours, preferably overnight.

    Transfer to a pot and bring to a boil over medium heat. Reduce to low heat and simmer for 1–2 minutes. Remove peach halves and layer them in jars. Reduce the syrup over high heat until it thickens by about one quarter, then pour over the peaches so they are covered. Seal jars tightly and let cool.
