Sweet and Sour Pickled Porcini Mushrooms

Ingredients

  • 1 kg porcini mushrooms
  • 250 ml Water
  • 500 ml white wine vinegar
  • 3 tbsp sugar
  • 1 tsp salt
  • 2 Bay leaves
  • 8 white peppercorns
  • 1 tbsp mustard seeds

Instructions

    Rinse canning jars very hot and let them drain.

    In a wide pot bring water to boil. Meanwhile clean the mushrooms, leave small ones whole, halve larger ones. Boil mushrooms in boiling water for 2-4 minutes, then strain and immediately shock with cold water until cooled; drain.

    For the brine bring water, vinegar and spices to a boil.

    Meanwhile layer the mushrooms into the jars, pour the hot brine over them, seal immediately and place jars upside down to vacuum. After about 10 minutes the jars can be turned right side up.

    The mushrooms keep for about 4 weeks.
