Ingredients
- 6 ripe peaches
- 1 grapefruit
- 1 blood orange
- 1 untreated lemon
- 300 ml wine vinegar
- 100 ml rum
- 200 g sugar
- 4 cloves
- 1 tsp mixed peppercorns
- 4 allspice berries
- 2 star anise

Wash the peaches, halve them, core and cut into wedges. Peel the grapefruit and blood orange, removing the white pith, and separate the fruit segments from the membranes. Rinse the lemons hot, dry rub them, and also cut into wedges. Mix with the remaining fruits and distribute into well-sauced canning jars.

Bring vinegar, rum, 200 ml water, sugar, cloves, peppercorns, allspice berries, and star anise to a boil, pour over the fruit, and seal the jars tightly. Let cool and store in a dark place for about 2 weeks.
