Ingredients
- 1 kg melon flesh e.g., Cantaloupe (peeled and seeded)
- 2 untreated oranges
- 1 untreated lemon
- 500 g gelatin sugar (2:1)
- 1 sprig lavender
Instructions

Dice the melon and place it in a pot. Wash the oranges and lemon hot, dry rub them, and grate their peels. Squeeze out the juice and add everything to the melon.

Stir in the sugar. Roughly mash with a potato masher. Place the lavender buds in a spice bag, add to the mixture, and bring to a boil.

Cook while stirring for about 4 minutes until bubbling (do a gel test). Remove the lavender, pour the jam into prepared jars, seal tightly, and let cool.
