Ingredients
- 1 Charentais melon
- 1 netted melon
- 500 ml dry white wine
- 300 g honey
- 75 ml vinegar essence (25% acidity)
- 3 star anise
- 8 cloves
- 150 g fresh ginger
Instructions

Halve the melons, remove seeds and scoop out the flesh with a melon baller.

Boil 250 ml water together with the white wine, honey, vinegar essence and spices; slice the ginger thinly and add it to the pot.

Let the melon balls simmer in the broth for about 5 minutes over low heat, then remove them and fill hot‑washed jars.

Bring the broth back to a boil and pour the boiling liquid over the melon balls.

Seal the jars immediately, invert them to cool for roughly 20 minutes, then turn upright and let them cool completely.
