Ingredients
- 1.5 kg mirabelle
- 750 ml wine vinegar
- 500 ml water
- 750 g sugar
- 1 cinnamon stick
- 1 vanilla pod
- 1 tsp black peppercorns

Pit and wash the mirabelles. Briefly dip the fruit in boiling water to loosen the waxy coating.

Carefully pour the mirabelles into canning jars. Bring vinegar, water, sugar, and spices to a boil until the sugar dissolves. Pour the hot liquid over the fruit and seal the jars. Process the jars for 30 minutes at 80°C.
