Ingredients

  • 1.2 kg plums
  • 2 chilies
  • 1 kg gelatin sugar
  • 20 ml rum
  • 4 tbsp Lemon juice
  • 1 tsp grated zest of an untreated lemon

Instructions

    Score plums crosswise, briefly rinse with hot water, peel, halve, pit, and dice.

    Wash chilies, cut lengthwise, deseed, and finely chop.

    Combine plums and chilies, add enough water to reach 1 kg total volume, stir in gelatin sugar, cover and let steep for about 6 hours. Then bring slowly to a boil and simmer while stirring for 3 minutes until sparkling. Stir in lemon juice, zest, and rum. Immediately pour into prepared jars, seal tightly, and cool upside down on the lids.
