Pickled Green Tomatoes

Ingredients

  • 500 g small green tomatoes
  • 150 g onions
  • 2 cloves garlic
  • 100 ml light grape juice
  • 300 ml white wine vinegar
  • 1 tsp peppercorns
  • 1 tbsp mustard seeds
  • 3 bay leaves
  • 0.5 tsp Salt
  • 150 g raw cane sugar
  • 20 g fresh herbs (rosemary, dill, bay leaves, tarragon)

Instructions

    Wash the tomatoes and let them drain.

    Peel the onions and slice into thin rings. Peel the garlic cloves and halve them. Mix the grape juice with the vinegar, onions, garlic, peppercorns, mustard seeds, bay leaves, sugar, and salt.

    Bring the mixture to a boil while stirring occasionally, then simmer for 5 minutes. Add the tomatoes and cook together for another 5 minutes. Rinse fresh herbs in hot water, place them in pre-warmed jars, fill with tomatoes. Reheat the brine until boiling and pour over the tomatoes until covered. Seal the jars tightly.
