Swedish Blueberry Soup

The Swedish blueberry soup is a real miracle weapon against heart and circulatory diseases thanks to the small berries. Try this cool soup.
Ingredients
- 800 g fresh blueberries
- 30 g whole cane sugar
- 1 pinch Vanilla powder
- 400 ml apple juice
- 1 tbsp Cornstarch
- 1 lemon
- 100 ml whipping cream

Rinse the blueberries, wash them, drain well and put them with sugar, vanilla powder and apple juice in a pot. Simmer for 2–3 minutes over medium heat until the sugar dissolves.

Squeeze the lemon and whisk the juice with the cornstarch until smooth, then stir into the soup. Bring to a quick boil and let thicken. Pour the blueberry soup into bowls and let it cool. Add a dollop of cream on top before serving.
