Ingredients

  • 125 g liquid butter
  • 2 Eggs
  • 75 g sugar
  • 150 g flour
  • 0.5 tsp Baking powder
  • butter (for the pan)
  • 1 lemon (juice and grated zest)
  • 800 g Boskop apples
  • 40 ml Calvados
  • 125 g butter
  • 50 g powdered sugar
  • 1 tbsp vanilla pudding powder
  • 3 eggs
  • powdered sugar (for dusting)

Instructions

    Beat eggs with sugar until creamy. Mix flour with baking powder, quickly fold into the egg mixture and stir in the liquid butter. Pour dough into the greased springform pan, smooth top and use a spoon to form a ~4 cm high rim. Place dough in the refrigerator.

    Wash, peel, quarter, core and cut apples into small pieces. Immediately mix with lemon juice and Calvados.

    Beat butter with powdered sugar and pudding powder until creamy.

    Separate eggs. Stir yolks and lemon zest into the butter mixture. Whisk egg whites to stiff peaks and fold in. Combine apple pieces with the cream and spread over the batter. Bake in a preheated oven at 180°C for about 50 minutes. If the cake browns too much, cover with foil.

    Remove from oven, let cool in pan, then release from the pan and serve dusted with powdered sugar.
