- 200 g Flour
- 1 tsp Baking powder
- 80 g sugar
- 1 pinch salt
- 80 g Butter
- 1 egg
- butter (for the pan)
- flour (for dusting)
- 750 g applesauce
- 50 g Raisins
- 1 packet vanilla pudding powder (for 500 ml liquid)
- 2 tbsp sugar
- 150 g flour
- 60 g sugar
- 80 g Butter
- 1 tsp cinnamon powder
- 3 egg yolks
- 1 vanilla bean (aroma)
- 300 ml whipping cream
- 60 g sugar

For the base mix flour, baking powder, sugar and salt. Sprinkle small pieces of butter over the mixture and rub between your hands until a sandy consistency forms. Add the egg and knead into a smooth dough. Wrap the dough in plastic wrap and chill in the refrigerator for about 1 hour.

Preheat the oven to 160°C fan. Butter a springform pan. Roll out the dough on a floured surface into a circle and line the pan up to about 4 cm high at the edges.

For the filling whisk applesauce, raisins, pudding powder and sugar together. For the crumb topping rub flour, sugar and butter in small pieces with cinnamon between your fingers until crumbly. Spread the filling evenly in the pan and top with crumbs. Bake for about 45 minutes; let cool slightly before removing from the pan. Cool on a wire rack.

For the vanilla sauce heat all ingredients over a hot water bath while stirring until the mixture thickens just before boiling. Keep at least 1 hour cold until serving.
