Ingredients

  • 220 g flour
  • 80 g sugar
  • 2 tsp Baking powder
  • 1 pinch salt
  • 1 egg
  • 100 g cold butter
  • 4 large tart apples
  • Cinnamon
  • 500 ml milk
  • 40 g cornstarch
  • 2 packets bourbon vanilla sugar
  • 40 g sugar
  • 2 Eggs
  • 50 g almond slivers
  • powdered sugar

Instructions

    Preheat the oven to 180°C fan.

    Quickly knead flour, sugar, baking powder, salt, egg and finely cut butter into a dough. Roll out on a floured surface, place in a greased springform pan and lift a 3 cm rim.

    Peel, quarter, core apples and cut into about 1.5 cm pieces. Distribute over the dough and sprinkle with cinnamon.

    Take 5-6 tbsp of milk, whisk with cornstarch, sugar and vanilla sugar. Bring remaining milk to a boil in a pot; just before boiling stir in the starch mixture and continue boiling while stirring. Let it boil briefly, remove from heat and let cool slightly, dusting the surface with powdered sugar to prevent skin formation. Separate eggs; fold yolk into cooled pudding. Whisk egg whites with a pinch of salt until stiff and fold into pudding. Spread mixture over apples and smooth. Sprinkle almond slivers on top and bake in preheated oven for 30-40 minutes until golden brown.
