Summer Pasta Salad

A fruity summer pasta salad from Spoonsparrow is perfect for hot days, as a lunch or side for grilling or to take to the office!
Ingredients
- 350 g Whole wheat pasta
- Salt
- 2 oranges
- 1 apple
- 200 g green and blue grapes (pitted if desired)
- 2 stalks celery
- 80 g Black olives
- 3 stems dill
- 1 bundle chives
- 150 g Yogurt (3.5% fat)
- 1 tbsp Apple cider vinegar
- 20 g coarse mustard (1 tbsp)
- black pepper (freshly ground)

Cook pasta according to package instructions in plenty of boiling salted water until al dente, drain and let cool.

Peel oranges thoroughly and cut out the segments. Squeeze juice from remaining fruit flesh. Wash apple, quarter it, remove core, and dice into cubes. Rinse grapes and halve if desired. Trim celery, wash and slice into rounds. Drain olives well. Wash dill and chives, shake dry, pluck dill leaves and finely chop, cut chives into thin ribbons.

Whisk orange juice with yogurt, vinegar, mustard, salt and pepper. Toss all prepared salad ingredients together, adjust seasoning and serve.
