Ingredients

  • 200 g leftover deer roast
  • 2 ripe pears
  • 2 tsp lemon juice
  • 0.5 head celery
  • 2 Kiwis
  • 2 tbsp chopped walnuts
  • 6 tbsp mayonnaise
  • 1 tsp Mustard
  • 3 tbsp heavy cream
  • 8 leaves Lollo Rosso lettuce
  • Salt
  • Pepper

    Peel, halve, core the pears and slice them into strips with the game meat. Drizzle the pears with lemon juice. Peel, trim, and cut the celery into strips. Blanch in boiling water for 2 minutes and drain well. Peel the kiwis, slice them, and dice half of each. Mix the kiwi cubes with the meat, pears, celery, and walnuts. Whisk together mayonnaise, mustard, and cream; drizzle over the salad. Wash and pat dry the lettuce leaves, arrange on plates, top with the game salad, and garnish with kiwi slices. Sprinkle with salt and pepper.
