Summer Fruit Salad with Mint

Ingredients

  • 250 g pineapple
  • 2 Kiwis
  • 200 g Blueberries
  • 4 Apricots
  • 1 tbsp Lemon Juice
  • 200 g Low-fat quark
  • 150 g coconut yogurt
  • 2 sprigs mint (for garnish)
  • 2 tbsp chopped almonds

Instructions

    Peel the pineapple, remove the core and cut into about 2 cm pieces. Peel the kiwis, halve them and slice. Wash the blueberries and let them drain. Wash the apricots, halve them, deseed and quarter.

    Combine the fruit in a bowl with lemon juice and then divide among four glasses. Whisk the quark with coconut yogurt until smooth and spoon a dollop onto each fruit salad. Garnish with mint and chopped almonds before serving.
