Ingredients
- 400 g sugar snap peas
- 400 g pea pods
- Salt
- 1 Garlic clove
- 4 tbsp olive oil
- 3 tbsp sherry vinegar
- 1 tsp sugar
- pepper (coarsely ground)
- 200 g goat cheese (or sheep cheese as substitute)
- 200 g serrano ham
- parsley (for garnish)

Clean and wash the sugar snap peas, peel the peas from their pods. Cook both in plenty of boiling salted water for 1 to 2 minutes until firm. Drain the vegetables, rinse under cold water, and let them drain.

For the dressing, peel and chop the garlic, then mix with olive oil, sherry vinegar, sugar, a pinch of salt, and pepper. Toss the peas and sugar snap peas with the dressing.
