Ingredients

  • 200 g Flour
  • 125 g butter
  • 60 g Butter
  • 1 egg
  • 1 kg pears
  • 3 eggs (separated)
  • 150 g honey
  • 200 g ground almonds

Instructions

    Peel, halve, and remove the core of the pears. Then bring 0.25 l water with sugar to a boil, add the pears, cover and simmer gently for about 12 minutes.

    Knead flour with butter, honey, and one egg into a smooth dough, chill for about 30 minutes. Roll out on a floured surface, line a greased springform pan, and lift the edges.

    Whisk yolks with honey until fluffy, fold in almonds, then fold in beaten egg whites. Spread over the dough base, smooth, place pear halves cut side down onto the almond mixture, gently press in.

    Bake in preheated oven at 180°C for about 60 minutes. Remove, let cool slightly, carefully lift the edges, and allow the cake to cool completely.
