Ingredients

  • 200 g soft butter
  • 1 pinch salt
  • 100 g coconut palm sugar
  • 4 eggs
  • 200 g unsweetened applesauce
  • 200 g rice flour
  • 225 g cornmeal
  • 75 g ground almonds (peeled)
  • 2 tsp Baking powder
  • 6 tart apples (about 1 kg)
  • 1 tbsp Lemon Juice
  • 1 tbsp almond sticks

Instructions

    Beat the soft butter with salt and coconut palm sugar until fluffy. Add eggs one at a time, then fold in the applesauce. Quickly mix the flours with almonds and baking powder, then stir into the batter. Peel, quarter, core the apples and score the bumps without cutting through; brush with lemon juice.

    Pour the dough into a parchment-lined pan, place the apples on top and press lightly. Sprinkle almond sticks over. Bake in a preheated oven at 200 °C (180 °C fan) for about 35 minutes or until a skewer comes out clean.
