- 1 smoked Snoek (Atun, or Goldtail Mackerel); ready to cook and skinless
- Salt
- 3 tbsp oil
- 120 g apricot jam
- 3 tbsp Worcestershire sauce

Wash the fish, pat dry and season with salt. Brush the grill grate with oil. Place the opened fish on the grate and secure it. Mix the apricot jam with Worcestershire sauce and spread this mixture on one side of the fish. Grill that side for 2-4 minutes, then spread the mixture on the other side, flip the fish, and grill for an additional 2-4 minutes until cooked through.
