Stuffed Turkey Breast with Dried Plums

Ingredients
- 1 turkey breast fillet (about 1.2 kg)
- 350 g dried plums
- 150 g walnuts
- 100 g Hazelnuts
- 1 tbsp walnut oil
- Salt
- Pepper
- paprika powder
- 2 tbsp clarified butter
- 400 ml meat broth
- mint leaves for garnish

Wash the turkey breast, pat dry and slice lengthwise. Roughly chop the dried plums with the nuts and mix with walnut oil. Season the meat with salt and pepper and spread the filling on it. Fold from one end and roll up. Secure the top with toothpicks and sprinkle a little paprika powder.

Heat clarified butter in a roasting pan and sear the turkey on all sides lightly. Pour in the broth, cover tightly and simmer for about 50 minutes. Preheat the oven to 180 °C (356 °F) fan‑forced heat.

After cooking, remove the lid and brown the top in the preheated oven for about 10 minutes. Slice into rounds and serve on a warmed plate with mint leaves.
