Ingredients

  • 4 chicken breast fillets (≈160 g)
  • 2 tbsp peanut oil
  • 1 lime (juice, zest)
  • 1 tbsp freshly grated ginger
  • 1 tsp wasabi
  • Salt
  • pepper (ground)
  • 4 stalks lemongrass
  • 300 g broccoli florets
  • 150 g sugar snap peas

Instructions

    Wash and pat dry the chicken breasts. For the marination mix oil with lime juice, zest, ginger, wasabi, salt and pepper, then coat the chicken breasts. Let rest for about 30 minutes.

    Place the chicken breasts in a bamboo steamer lined with parchment paper, add lemongrass on top, seal the steamer, and steam over a hot water bath for 8–10 minutes.

    Meanwhile wash, drain and trim broccoli and sugar snap peas, then place them in another steamer. After the chicken has steamed, add this second set, seal, and steam for an additional 3–4 minutes. Serve on plates with lemon slices arranged around the steaming baskets.
