Ingredients
- 100 g glass noodles
- 2 carrots (peeled and julienned)
- 1 green bell pepper (peeled, seeded, and julienned)
- 1 small piece celery (diced)
- 1 spring onion (peeled and sliced into thin rings)
- 1 red chili pepper (seeded and finely chopped)
- 2 chicken breast fillets
- 250 ml poultry broth
- 2 tbsp Soy sauce
- sesame oil
- coriander leaves
- Salt
- black pepper (ground)
Instructions

Simmer the chicken breast fillets in the poultry broth with soy sauce for about 12 minutes, remove and roughly shred.

In the broth first simmer the carrots, then the bell pepper strips, then the spring onions each for about 4 minutes; remove, drain, then add the celery cubes and chilies, cook for 5 more minutes, season the broth with salt and pepper.

Meanwhile, cook the glass noodles in boiling salted water according to package instructions, remove and drain.

Return the meat and vegetables to the broth, heat through, serve with the glass noodles, drizzle with sesame oil.
