Stuffed Tomatoes with Goat Cheese

Spoonsparrow stuffed tomatoes with goat cheese are always delicious.

Ingredients

  • 50 g red lentils
  • 1 clove garlic
  • 480 g small tomatoes (8 small tomatoes)
  • 5 g thyme (8 sprigs)
  • 200 g goat fresh cheese (20% fat in cream)
  • Salt
  • Pepper
  • 1 tbsp Lemon Juice

Instructions

    Add lentils to twice the amount of boiling water and simmer gently for about 10 minutes until tender. Then let cool.

    Meanwhile, peel and finely chop the garlic. Wash the tomatoes, cut off a lid from each and set aside; scoop out the insides. Rinse the thyme, pat dry, pluck half the leaves and finely chop them.

    Mix goat fresh cheese with red lentils, chopped garlic and thyme, salt, pepper, and lemon juice; taste and adjust seasoning.

    Fill the tomatoes with the lentil-goat mixture and place the reserved lids on top. Grill on a preheated grill for 5–10 minutes. Sprinkle with extra pepper, garnish with remaining thyme, replace the lids before serving. Enjoy the stuffed tomatoes with goat cheese.
