Sesame Fan Potatoes

Ingredients
- 800 g large potatoes
- 1 onion
- 2 Spring Onions
- 0.5 green bell pepper
- 3 tomatoes
- 300 g quark
- 2 tbsp heavy cream
- 2 tbsp lemon juice
- 6 tbsp sesame seeds
- Salt
- ground black pepper
- basil (for garnish)
Instructions

Wash the potatoes thoroughly, boil them with skins in salted water for about 25 minutes, then drain and let cool slightly.

Peel the onion and dice it finely. Trim and wash the spring onions, slice into thin strips. Wash the bell pepper, halve it, remove seeds, trim, and dice small. Wash the tomatoes, quarter them, remove seeds, and dice similarly.

Whisk the quark with cream and lemon juice, season with salt and pepper, then fold in the chopped vegetables.

Cut each potato lengthwise in half, press the cut side into sesame seeds, then slice into fan shapes while still connected. Place the fans skin-side down on a greased baking sheet and bake at 200°C (lower rack) for about 15 minutes.

Plate the potatoes with the vegetable quark sauce and garnish with basil leaves.
