Fruitful Carrot Soup

Ingredients

  • 400 g Carrots
  • 200 g starchy potatoes
  • 2 cloves garlic
  • 2 tbsp sunflower oil
  • 1 tsp freshly grated ginger
  • 1 tsp curry powder
  • 600 ml Vegetable Broth
  • 100 ml Orange Juice
  • 100 g crème fraîche
  • Salt
  • Cayenne pepper
  • 2 tbsp fresh chopped parsley

Instructions

    Peel and dice the carrots and potatoes. Peel the garlic and slice into thin rounds. Sauté all together for 1-2 minutes in hot oil in a pot. Add ginger and curry, cook briefly, then deglaze with broth and orange juice. Simmer gently for about 20 minutes while stirring occasionally. Then puree finely, stir in crème fraîche, and season with salt and cayenne pepper.

    Serve the fruity carrot soup in bowls or cups, sprinkled with parsley.
